I am all about fruit and cold desserts this time of year. Give me chilled creme brulee, chilled pies, ice cream, berries and cream, I’m all for it this hot time of year. I think my favorite of all is tres leches. I’d have it every day if I could! Hahaha. So today I have to share this easy and amazing recipe for Tres Leches cupcakes!
I actually cheated with this recipe and just used a doctored up yellow cake mix! My secret trick to improving any cake mix is adding instant pudding mix! You don’t need to prepare the pudding. I just add half (1.5 oz) of the dry pudding to any boxed cake mix I am using! It works like a charm! I hope you enjoy this easy delicious recipe perfect for all summer gatherings!
Using a doctored up yellow cake mix, this tres leches recipe is easy to make and always a crowd pleaser!
- 1 Yellow Cake Mix
- 1.5 oz Vanilla Pudding Mix Do not prepare, just use powder
- 1 cup Sour Cream
- 3/4 cup Vegetable Oil
- 3/4 cup Water
- 3 Eggs
- 1 can Sweetened Condensed Milk 14 oz
- 1 can Evaporated Milk 12 oz
- 1/4 cup Heavy Cream
- Whipped Cream
- Sliced Strawberries
- Coconut Flakes
Combine all cake ingredients and mix well for at least 3 minutes.
Divide batter into cupcake liners that are double lined (two cupcake liners per cupcake)
Bake at 350 degrees for 15-20 minutes, be sure to not over bake!
After baking, allow to cool about 15-20 minutes, leaving cupcakes in pan.
While cupcakes cool, combine the three milks, whisk together just until combined.
Poke each cupcake a few times with a fork.
Pour leches mixture over cupcakes. I like to fill them as much as possible, but that's up to you!
Allow cupcakes to soak at least for 1 hour, or overnight.
Topping with whatever toppings you wish!
