In a moment of desperation, I was really craving some coconut macaroons. My usual recipe uses sweetened condensed milk, so I wasn’t sure I would be able to find a keto alternative that would work. But then I remembered I had bought a bag of coconut flour from Trader Joe’s that had a coconut macaroons recipe on the back that we had enjoyed ages ago that did not use sweetened condensed milk. To my delight I found they translated to being keto friendly very easily and I am so excited to share this recipe with you! It is so easy to whip up and I honestly think anyone would be fooled, you would have no idea that they were keto friendly and only about 2 net carbs per macaroon!!
These keto friendly (gluten-free!) coconut macaroons are sure to satisfy any sweet tooth! At only about 2 net carbs per macaroon, they are the perfect guilt-free treat! These have a very cake-like texture to them, but you could easily add more coconut to them if you wish.
- 1/4 cup butter or coconut oil, softened
- 1/2 cup sugar or sugar alternative To make these keto, we used xylitol
- 1/2 tsp vanilla
- 2 eggs
- 1/4 tsp salt
- 1/4 cup coconut flour
- 1 cup shredded coconut Unsweetened for keto
- 3 oz dark chocolate We used Lily’s No Sugar Added Dark Chocolate
- 1 tbsp coconut oil To help melt and drizzle the chocolate
Preheat oven to 375 degrees
Mix together butter, sugar, vanilla, and eggs.
Stir in salt, flour, and coconut until combined.
Using a small cookie scoop, scoop out macarons onto a pan lined with parchment paper.
Bake for 12-15 minutes, just until golden brown.
(optional) Microwave dark chocolate and coconut oil at 25-second increments until melted, stirring after each time. Dip and drizzle over macaroons.
